Yesterday morning I was just telling Kar and Rach that I wanna make some Hong Kong style breakfast. Those you can find in their traditional cafeteria, 茶餐廳. And soon after tea with Kelly and Tabi, I came down with a really bad fever and sore throat.
It was more than timely to cook up some macaroni soup. The traditional Hong Kong breakfast would be macaroni soup with shredded ham. But I added in diced mushrooms, corn kernels and spring onions. This is the ultimate comfort food when feeling under the weather.
1. Cook the macaroni until al dente
2. Dice mushrooms, steam/boil corn kernels, shred ham and chop up spring onions
3. Bring chicken stock (w/o msg) to boil
4. Add in the macaroni, mushrooms, corn kernels and bring to boil again
5. Season with salt and pepper to taste
6. Serve in bowl topped with spring onions, shredded ham and a drizzle of sesame oil
