Holidays!

The month of the holidays has arrived! I'm so stoked for what is to come, think Christmas carols, shopping, lights, gifts and food!
I was planning to launch a '12 day to Christmas' series where I'll be posting consecutively Christmas dishes
12 days prior to Christmas. But I honestly doubt I'll be able to keep up!

So in honour of the festivities, I've decided to dedicate my December posts to all things Christmas instead!

To kickstart the Christmas season, I decided to do something familar and a hot favourite with everyone.
This cupcakes need no introduction. They are light and moist, with a rich red colour to them
and lovely swirls of cream cheese frosting. Perfect for a Christmas dinner invitation gift, door-gift or dessert!

In order for your cupcakes to rise beautifully and have a light airy texture:
Combine 1/2 teaspoon baking soda to 1/2 teaspoon vinegar. This will create a fizz.
Then quickly fold it into your cupcake batter, divide them and pop them in the oven as quickly as you can!

It is important to use cold heavy whipping cream with more than 35% of butterfat. Otherwise, it isn't gonna
whip up to stiff peaks and your frosting isn't gonna be creamy and smooth! Alternatively, if you're afraid it might not whip up,
you can whip the heavy cream separately before folding it into the cream cheese mixture.

I followed the recipe from Joy of Baking. I'd highly recommend watching the video even though it's a little lengthy. It's gonna be very helpful when you bake especially since you're able to see the right consistency you should achieve for your cupcake and frosting mixtures.

Apart from that, this cupcakes were a hit with my family and friends. You guys should really try them out this holiday season!

Have a jolly one!
