Butter Cookies

Ingredients:
226g butter
3/4 cup caster sugar
1/4 teaspoon salt
1 1/2 teaspoon vanilla essence
1 large egg yolk
2 cups all purpose flour

Directions:
Beat butter, sugar, salt and vanilla until smooth and creamy
Mix in the egg yolk until well incorporated
Add the flour and mix until incorporated
On a floured surface, knead the dough a few times
Wrap the dough in plastic wrap and place in the fridge for several hours
Heat oven to 163 degree celsius
Place cookies on baking sheet and bake until edges are golden

Do note that if you like your cookies crispy, bake them thin. And of course, if you like them on the softer side, bake them thicker!

I like to call these cookies, versatile cookies. You can do anything and everything with them. Here are some options:

1. Roll and cut them into shapes you like before baking
2. Beat egg white and 1 teaspoon of water together, brush the cookies with it
and add your choice of toppings - nuts, sugar sprinkles, or whatever your choice of toppings before baking
3. Half-dip them in chocolate
4. Sandwich them with chocolate, jam or lemon curd
5. Glaze them with royal icing
6. Make and eat them

This time, I spread chocolate sauce made from Hershey's Special Dark Kisses and added rainbow sprinkles!
To make the chocolate sauce you can see how I did them here.

If you try it out, tweet or tag me on Instagram @joyxchan or use the #aplatterofjoy. I'd love to see your cookie creations!
